Australia has this general stamp, and also they will release a stamp for each gold medalist. They do them every Olympics, they are available a couple of days after the medal is won. There’s some older examples below.
There is a maxicard of the Tokyo stamp, but the other stamps will be for the domestic rate only, sorry, so don’t expect to see them on postcards.

I wish they had released one of them to send within Europe instead of 2 for the rest of the world.
Germany has a series of stamps with new Olympic disciplines. I think they’re very pretty!

I have not seen any recent Olympic stamps from the postal service here either. I recently bought some from the past (1972, 1980 & 1984) that I will use periodically as I send cards around the world. Unfortunately no photos of them.
I haven’t seen any Tokyo olympics stamps issued from India…but India has issued stamps in many previous olympics…
